Holiday Bite-Sized Treats: Ways to Use Christmas Leftovers into NYE Canapes
What types of bite-sized appetizers can I whip up for New Year’s Eve using my Christmas remaining food that will still seem festive?
Party snacks needn't be fancy, so New Year's presents a perfect chance to clear the decks. The main guideline is to stick to items to just one bite—no one wants to manoeuvre a fork. Guests just want a comforting taste of comfort food with a decadent twist.
Should you possess a bit of smoked salmon left, place it on mini pancakes and top it with lumpfish caviar. Mini fishcakes are also an ideal choice: Whether you've got leftover smoked haddock or flaked salmon, fold it through creamy potatoes, blend with fresh herbs, citrus, and caramelized onions, then roll in Japanese breadcrumbs and fry until golden.
You could also have a ball with croquetas. Make the bechamel up to days ahead, then use remaining pork, chicken, or mushrooms for the filling. Blitz old bread into breadcrumbs to cover them, then cook until crisp. Savoury pastry mixtures are another perfect use for those breadcrumbs, or use them as a jacket for bite-sized chicken. Seasoning-wise, just add a bit of lemon zest and thyme, and they'll taste so much more. As an aside, buttery pastries make excellent crumbs, too.
One favourite thing at this time of year is a leftovers sandwich, and that doesn't have to stop after Boxing Day. Place some ham and turkey in an airtight container and store in the freezer. While you're at it, reserve some cranberry sauce and sweet glaze in the refrigerator. When needed, thaw the meat, then place it in a preheated oven with the reserved glaze for a brief period. Let it cool and slice thinly, then arrange on top of some sourdough and assemble mini sandwiches with lots of tangy sauce. Cut into bite-sized pieces for a winner.
Leftover turkey, meanwhile, could be transformed into a spicy, crisp salad. There’s always a bit of dark meat left over, and it's ideal for something full of flavour. Shred the meat, then fry it slowly in a pan, and toss with remaining sauce loosened with citrus juice, a spoonful of soy sauce and a little chilli oil. Finish with fresh herbs and some sliced spring onion, and serve in little gem leaves.
Transforming Leftover Vegetables
Vegetables, meanwhile, can be scrubbed up and ready to party with a big batch of fried potato cake. Combine all your leftover veg with fresh herbs, then add salt and pepper and incorporate flour. Stamp out portions to about the size of blinis, then store in the icebox. Refresh in a hot oven for a few minutes and top with your choice of topping—perhaps sliced beef and sharp horseradish. A good tip, though: set some aside for a late breakfast the next day.
